DESCRIPTION:
The Norwegian Meat Research Centre (NMRC) is the research and knowledge centre of the Norwegian meat industry. The main focus of NMRC is on optimising processes, improving yield and quality and offers the meat industry new insight and knowledge in all areas, and to improve the industry¿s competitive edge. NMRC conducts research, promote and undertake generic measures to improve pork and beef, as well as mutton and lamb quality along the value chain. Among these are national and international projects on how to improve economic value in the meat industry, cost efficiency programs and quality improvements, as well as animal welfare-, food safety and quality assurance services hygiene programmes and HACCP. The NMRC has in-depth knowledge on fresh and dry cured meat. Through our extensive international contacts and with the industry¿s increasing focus on dry cured meat, we have initiated and led a development project introducing Norwegian long-term dry, cured ham from pork and lamb, - all
